Chillin and Grillin-Marinated Chicken with Grilled Veggies

Nothing says summer like good ole fashioned grillin!  I love throwing together some protein and veggies with a simple marinade and cooking everything up on the grill.  Its so easy to whip up healthy meals by omitting fat and oil that are often needed for stovetop cooking.  Recently we fired up the grill and made up a marinated chicken dish with grilled veggies.  Check it out!

I started out with a red pepper, poblano, jalapeno pepper and avocado.  I kept these whole on the grill.  You can put it directly on the heat or, like me, I put my veggies on aluminum foil.

I also grilled up some yummy, sweet fresh corn on the cob!  I threw the chicken on with salt and pepper and a little bit of chili powder.  I then turned to the chicken marinade.

To make the marinade I combined agave syrup with hot sauce, gin, butter and a dash of grill seasoning.

I brought all the ingredients to a boil and then allowed the marinade to simmer on low for about 10 minutes.  Meanwhile, I got to grillin the meat and veg!

Ok and when I say “I was grilling” . . . I really mean my sous chef, Pete! 😉

MMMMM….Looks so good!  After the marinade simmered for ten minutes, I brushed it onto the chicken and continued to cook them up.  (Don’t forget that the veggies will not all need the same amount of time on the heat so monitor them carefully!)

When the corn is done, take a knife and run it down each side of the corn to remove the kernels from the cob.  Chop up the peppers and avocado.  Then combine everything into a bowl with some reduced salt black beans and squeeze the juice of one lime into the salad.

Serve up the southwestern salad with the grilled chicken and a side of the marinade.

Mouthwatering, spicy goodness!

So good and so healthy all at the same time!  And of course, no al fresco dining is complete without some dessert.  We tried Ciao Bella gelato in creamy coconut and cool key lime with a little bit of watermelon and mint.  Ahhhhhhh summer!
