Eats Lately + A New Zumba Video!

What have you been eating lately?  I’m curious to know!  I’ve been on a big veggie kick which is a result of no man in the house (sorry Hubs but if I can get away with no meat . . .) and the fact that I found the most amazing farmer’s market near my work.  Confession: I actually work right by my old law firm  but for some reason I never bought veggies here before.  I honestly don’t know what was wrong with me!  This week’s loot:

So with all these veggies here’s what I’ve been making and eating lately:

This totally wonderful panko-crusted caprese eggplant recipe that I found on Tara’s blog: Food and Other Things.  Amazing!

Plus, I made my first batch of kale chips!  Taste way better than they sound!  All you have to do is wash the kale and dry it well.  Lay flat on wax paper on a baking sheet.  Drizzle with olive oil and add some salt.  Bake at 350 degrees for approximately 15 minutes or until crunchy but not brown.   Perfection.

Another really simple veggie recipe: cook a few shoshito peppers in olive oil and salt over medium heat until they are browned.  Eat whole.  Sooooo good!

I also recently made a spicy egg dish with those purple and white peppers I bought.  Fun fact, when you cook purple peppers they turn green!  Who knew!  I added in some Laughing Cow Queso Fresco and Chipotle cheese, jalapenos, salsa and avocado for a very yummy breakfast!

As promised yesterday (and in about 5 million other posts recently), I have a new Zumba video for you!! Yay!  The only problem with this one is that I had a cooldown song all planned and ready to film.  I started filming it and the battery to my camera died.  Plus, I didn’t have my charger with me at the time!  #MajorBloggerFAIL!  But not to worry, I was able to film the entire cardio sequence without a hitch (oh thank my lucky stars!).

So here’s the deal:

·         This is 30+ minute routine, perfect for days when you are short on time but want a great sweat.

·         You NEED to do your own cooldown and stretch at the end!

·         It’s non-stop so try not to push pause and keep moving!

·         If you don’t know what you’re doing/I’m doing then just shake what your mama gave you!
