Hello all!  We made it to another Friday!  I love a short week! 🙂 What are your plans for the weekend?  We are still hovering in the 60s and low 70s here, I’m ready to kick it up to beach weather!  All of my co-workers prefer winter…I think that is weird.  Anywho, welcome to another week of Friday’s Food & Fitness!

Well, you saw my effort earlier this week when I made this two pasta dinner with veggies.  I think I forgot to mention it was for six people.  Yeah, we didn’t eat that all ourselves.

Besides that I’ve been eating out a lot this week.  Eeek!  I try to limit the takeout/restaurants mid-week and save it for the weekends but this just wasn’t that kind of week.  Oh well.  I did get to have a lovely meal with Kimberly from Manifest Yourself.  She is so great!  I could talk to her for hours and in fact, we did just that.

Oh and for lunch this week, I made this incredible sandwich which I may have stolen from SHAPE magazine.  It was so inventive and so good!  Mozzarella cheese, arugula and sliced strawberries with balsamic vinegar.  Winning combination my friends.

And because I can’t get enough of pasta, I made this great recipe from cooking light.  It’s linguine with roasted red pepper sauce, burrata and basil.  So delicious!  The red pepper sauce is a little difficult to make because you have to roast the peppers under the broiler then peel the peppers and pulse them in a food processor before cooking in a skillet.  The recipe estimated 33 minutes to make this and it took me closer to 50!  Ugh.  But well worth it because it was so delicious!  I have some leftovers for tonight.  Woo hoo!

You guys, I’m so boring!  I have a formula: Zumba, Barre, Weights, Yoga.  BUT  I’m working on some upcoming posts with more details about my latest endeavors in these areas and I think they’ll be really interesting and fun so stay tuned!  If you want to check out my latest yoga adventure, see yesterday’s post on yoga in the MoMA!

In the meantime, I saw this article this week about a couple whose idea of a first date is canoeing.  They are now paddling from California to Hawaii to raise awareness about sugar.  It’s 2,400 miles and expected to take two months.  Whaaaat!?

My first reaction was, yeah I eat way too much sugar.  My second reaction was, can’t stop, won’t stop.  My third reaction was, hmmm this couple is really active.  It got me thinking about my own relationship.  My husband and I are normally pretty active (sadly I’ve had to give up cycling this summer for risk for falling-it’s almost as hard as giving up wine).  Our idea of a good time is kayaking, SUP, any water sport known to man, tennis, golf—we do it all!  I’m not sure we necessarily started out like this, rather it developed over time, but it does make us more compatible for sure.  

What about you, dear readers, do you and your spouse/significant other/best friend enjoy being active together?  Would you eat a strawberry sandwich?  Do you have a set fitness routine or do you like to switch things up?
