Hello awesome friends! Are you ready for an amazing weekend? You should be! I’ve got another summer Friday this week! Woo hoo! Can’t wait to relax this afternoon. It’s been a long week. I feel like all the stuff I used to do is so much harder now that I’m preggers. Not that I’m letting it stop me of course. Anywho, welcome to this week’s edition of Friday’s Food & Fitness!

One thing I love about summer is getting the heck out of dodge. And by dodge, I mean hot, stick and stinky NYC! My parents have a gorgeous house on Cape Cod, which I affectionately refer to as my beach house. They also have a grill. Unheard of in the city! So I love getting the chance to grill when I’m up there with them. This past week was no exception. It all started with some figs. I’ll explain.

My mom had a whole bunch of figs and she said she didn’t really know what to do with them. I immediately thought of this salad by Iowa Girl Eats, remembering that it not only calls for figs, but is incredibly delicious! But then what to pair with it? Well, since I was already there I figured I would check out her list of top summer recipes and I came across this chicken recipe. Sold.

And there you have it my friends, Fig & Frico Salad (left out the prosciutto) and Marinated Grilled Chicken with Cucumber-Watermelon Salsa.

In case you haven’t noticed, I’ve been on a summer pasta kick. Sadly this is the last recipe. Only because it’s the last one from the Cooking Light article I’ve been using that I want to make. This one, Silky Pappardelle with Zucchini Ribbons was so amazing! It got two big thumbs up from the Hubs!

This week I had my second Levo League event as NETWORKout Chairwoman. We partnered with Beatbox Fitness and it was so fun! You guys, a live DJ spun tunes will we punched, jabbed and kicked our way through an awesome cardio workout! I really feel like live DJs in classes are the next big thing. I even read recently that yoga and dance parties with live DJs are the new “raves” except everyone works out and meditates instead of getting wasted.

Back to the workout, the creator, Ailin, was amazingly positive and that combined with the music made for a great workout! We had such an awesome turnout as well. I was so excited to meet so many Levo League ladies and everyone was so incredibly nice! Stay tuned for our next event in July. I’ll be announcing it on the blog!

Oh and when I was at the studio where Beatbox was being held, I saw Tabitha D’Umo. Please tell me you guys watch So You Think You Can Dance? Husband and wife duo Tabitha and Napolean choreograph the most amazing hip hop routines, often to more lyrical pieces of music. They have even won an Emmy for their choreography. Not gonna lie, I was kind of starstruck.
