Friday’s Food & Fitness: Keep Going!

Hi friends!  Thank you all for the support on Wednesday’s post.  I can’t even begin to tell you how upset losing two months work has made me.  It stinks but I am going to keep going. If things are a little shaky around here, forgive me.  I’m working on getting everything back up to speed.  And with that, welcome to this week’s edition of Friday’s Food & Fitness!

I have to admit that life has been a little bit crazy lately and I have been relying on takeout way too much.  I just jumped back on board the sushi train and have been enjoying that but it is time to make some more homemade meals.  I used to do all my grocery shopping online but since moving to Brazil, I’ve been forced to go to the store more, which is kind of a pain.  So, needless to say my grocery shopping has fallen by the wayside.  It is a poor excuse, I know!

But I did manage to make a few good meals courtesy of Cooking Light on my tablet!  I made this beef ragout with parmesan polenta and it was a huge hit in my house!  So simple yet so satisfying.  It tasted even better the next day!

I also made this delicious beef with a yogurt sauce.  The yogurt sauce had chili flakes on it and it was so delicious.

Speaking of yogurt I found this amazing yogurt shop (and by I found, I mean a friend totally introduced me to it!).  They actually sell unsweetened Greek yogurt, which is amazing.  And I can get it delivered.  I’ve been trying out all the different flavors.  So yum!

Did you know the word for blueberry in Portuguese is blueberry?

I found these at the grocery store.

I paid R$50 for them (just under $20 USD).  Crazy.  I know.  But it was just a little taste of home.

And I made this amazing strawberry salad with them!  Grilled chicken, strawberries, mixed lettuce, feta, red onion, olive oil and white balsamic.  Delish!

Oh and my best culinary feat of the week was this:

That is rice cereal, mashed avocado and mashed banana.  The babe is eating solids and I’m trying out different things.  The rice cereal and avocado are a hit.  The banana not so much.

My fitness has been going strong!  I even got a barre workout in with my little buddy looking on.

And finally because I lost all of my posts since the beginning of March, I’m not going to recreate them but I am going to say that last Friday I wrote about living abroad as an introvert.  I wrote about how difficult it is for me to go out into groups and how shy I am but since moving here I have been forced out of my comfort zone and have met tons of new people in the expat community.
