Hello all my lovely friends!  Another Friday is here!  I can’t believe how quickly the week flies by!  We are here with another edition of Friday’s Food & Fitness!  So many fun things to talk about as always so let’s get right to it!

FOOD

Before I delve into all of my eats, let me tell you about an amazing thing Miss Davida over at The Healthy Maven has going on this month.  She is hosting a Bake Off beginning on February 9th and going until February 14th where she’ll be posting a healthified version of a baked good. Davida is challenging YOU to do the same and link up with her on February 14th.  So put your baking caps on now and think of something good.  My hot pink mixer may make an appearance.  Just sayin.

So recently I’ve been really into cooking up some new and exciting dishes like my first experience with homemade hummus.  I decided to drag the Hubs to a Date Night Cooking Class at Sur La Table last weekend for Chinese New Year!  We did a Tuscany Date Night there last year and it was so much fun!

On the menu this time around:

  • Kung Pao Shrimp
  • Pork Dumplings
  • Pork Roast with Bok Choy
  • Fortune Cookies

All of these things sound really labor intensive but Sur La Table makes it so manageable.  I guess they do a lot of the prep work for you so all you basically have to do is show up, chop some veggies and then throw some stuff in to cook.

The Kung Pao Shrimp were my favorite.  Super spicy and delicious!  I also enjoyed the Pork Dumplings.

Making the Fortune Cookies was so much fun!  They were matcha fortune cookies and they were so much easier to make than I thought.  Folding them up was a bit difficult though. I wrote out a little fortune for the Hubs and vice versa.

Overall the class was a great date night and we got to eat a ton of awesome food that we made!  Our chef Lisa was really upbeat making it even more fun.  Plus we got all the recipes to take with us.  There are a few other classes that I want to take including Meatless Meals, Weeknight Meals and one other than I can’t remember for the life of me right now.  If you are looking for a Valentine’s Day idea, I highly recommend this!

FITNESS

I have been keeping up with Find Your Balance February challenge!  Have you!?  Don’t forget the Athleta gift card on the line!  I’ve been following all your check-ins on the challenge page and love them!

I’ve been doing a lot of at-home workouts because with all this crazy weather a lot of classes have been cancelled.  But I found some amazing resources to use at home and they have been kicking my booty!

Zumba

I’ve also been getting my Zumba on pretty regularly AND I made it to Lunchbox Yoga for the fourth week in a row!  So happy about that one.  It’s like a peaceful oasis in the middle of the day.
