Hi friends! We’ve made it to Friday! Who am I kidding? Everyday is simultaneously a Friday and a Monday for me. Life as a stay at home mom (currently). The good news is that the Hubs comes home from Mexico today and my parents are in town for the weekend. Whoot whoot!

Welcome to this week’s edition of Friday’s Food & Fitness.  I took a little break on this series around the time Coops was born and I’m happy to be back at it!  It keeps me accountable.

You may have gathered from the title that I had some tofu this week.  I’m still rocking the Plated meals, which I can’t rave about enough.  However, my attempt to make a healthy meal this week just didn’t really work out…we had an Asian stir-fry with quinoa and tofu.  Can I just put it out there that quinoa and tofu are just not good?  I mean, I’m all about healthy eating but…blah…it just didn’t taste nice!  The ginger and the mushrooms were yummy though.

We did have a very nice tilapia piccata with orzo.  The fish tasted amazing!  I actually really don’t like capers, which are traditionally in piccata, so we left them out and the sauce was so so good.  The orzo was delicious and the entire meal felt light and healthy.

We rounded out the week with grilled chicken and soba noodles.

For Thanksgiving this year, we ordered our dinner from Dig Inn, one of my favorite NYC healthy restaurants.  They generously gave us two free meals so we headed there for dinner this week and man have I missed this place.  I usually go there for lunch when I’m at work but since I haven’t been at work for a few months now, I’ve missed out on my fix.  I had grilled chicken, bulgur, couscous with butternut squash and roasted brussel sprouts.  Everything was ahhhhhmazing!

I’m starting to get into a routine with the baby and I headed to Babies on Board barre class twice this week!

I also enjoyed some free online classes from Chaise Fitness!  The perfect naptime workout.

And I got my Zumba on!  It feels so good to be back!
