My Dream Day = Dance Plus Pizza

Hey guys!!  How are you?  Have you ever thought about what your dream day would look like?  I mean, if you could do anything in one day to make it the best day possible, what would it be?  Well, I know exactly what I would do:  dance and eat pizza!  Yep.  That’s what I would do!

So unfortunately, this pizza and dance extravaganza did not occur in one day but I don’t see why I couldn’t make it happen in the future.  First up, the dancing.

I’ve talked to you guys before about DMF but I wanted to mention it again because I went to this awesome media class awhile back and the founder, Lindi, is one of the most amazing positive people I’ve ever met. You guys, if you live in NYC or ever travel here for a second, you HAVE to go!  It is as much of a must see as Central Park or Times Square.

Her class is so fun!  it’s basically a non-stop dance party.  We were laughing and giggling and just grooving to the music.  A lot of people get worried that if they aren’t “dancers”  they’ll make a fool out of themselves in class and they will not enjoy it.  Well, I’m here to tell you that I am a dancer- from the age of 5 I started ballet and tap all the way through my twenties when I danced in a company and even I made a fool out of myself because that’s kind of what dancing is.  It’s doing funny things with your body, in synch with the music and having a good time.  So anyone who says they can’t dance, I ask you: 1.) Can you move your body in a non-traditional, potentially goofy manner?  2.) Can you do this to music?  3.) Are you capable of having a good time?  If you answered yes to any of these questions, you ARE a dancer!  Gasp!

But seriously, check out DMF.  It’s so fun and you will sweat buckets and burn loads of calories.

Ok so now that we’ve burned tons of calories, I can tell you about THE MOST AMAZING PIZZAS I HAVE EVER MADE!  That’s right, these pizzas were hands down the best I’ve ever made and I’ve got proof.  My parents and husband all said they were the best pizzas I’ve ever made.  Obviously these people are not biased so this is now an established fact.

First up the sausage and mushroom pizza.  Let me just tell you all that these pizza recipes all came from Williams Sonoma so I didn’t make them up myself, but I did modify them to suit our likes and dislikes and to make things easier for me.  I don’t make my own crust.  INstead I get Naan bread crusts, which are fantastic and cuts down on prep time a lot!

Anyways, back to the sausage pizza.  This was made with canned chopped San Marzano tomatoes combined with a little bit of Paul Newman marinara sauce to thicken it a bit.  I then added dried oregano and a little bit of EVOO.  Meanwhile, I sauteed up 50% reduced fat mild Italian sausage and some cremini mushrooms and added them on top of the pizza.  I topped with fresh mozzarella and fresh parmigiano-reggiano.  Easy peesy.  This one was the clear winner with the crowd!

Next up heirloom tomato and fresh arugula pizza.  This one was also so simple yet so good.  It starts with a simple pizza sauce on the base but I use the Paul Newman marinara sauce because it’s my fav.  I then topped with fresh, sliced heirloom tomato and fresh mozzarella. I also added some fresh basil.  You then cook the pizza and while it’s cooking, you put together a simple arugula salad with the juice of one fresh lemon, olive oil and salt and pepper to taste.  Once the pizza comes out of the oven, top it with the arugula salad and some fresh parmigiano-reggiano.  Like I said, simple but good.

Third and final pizza was my favorite: fig and prosciutto.  This one was sweet and slightly salty and just melt-in-your-mouth good.  You start by spreading fig jam on the pizza base.  You then top with sliced prosciutto.  In a skillet, you cook sweet Vidalia onions until they are caramelized and then add them to your pie.  Top with fresh thyme and creamy goat cheese.  This pie was amazing!  The best part was that it was so flavorful that you didn’t need to eat a lot to feel satisfied.
