 I had two major food highlights this week!  The first were this amazing stuffed eggplants.  I got the recipe from Skinnytaste.

Stuffed peppers

 I used chicken sausage for these peppers and while I really like chicken sausage, I don’t think I chose the best flavor.  I got peppers in mine and I wish I had just had plain because they added a little Latin or Mexican flavor.

These chicken panini sandwiches from Iowa Girl Eats were amazing!

chicken paniniPlus they were so easy to make!  Just grilled chicken, grilled eggplant, marinara sauce, fresh mozzarella and fresh basil.  Delish!
