Girls Weekend Plus a Zumba Video

So, how was your weekend?  Hope it was amazing!  Unfortunately the Hubs was working in Mexico this weekend so I was on my own.  I did what any girl would do, I planned a girls weekend. . . with my mom!  It was honestly one of the most relaxing weekends I’ve had in awhile.

The weather was so perfect on Saturday so we hit the beach for a healthy lunch, some swimming and of course lounging in beach chairs!

One of my favorite things about visiting my parents is the proximity to really fresh seafood.  For dinner, we grilled up some chile-rubbed lemon sole and halibut with pineapple, mango and strawberry salsa, plus spicy sweet potatoes.  Everything was unbelievably delicious and even more so because we got to dine al fresco!

Of course no summer dinner is complete without a delicious cocktail.  This week we tried out Skinnygirl Sweet n’ Tart Grapefruit Margarita.  It was the perfect pairing for our deliciously spicy fish meal.

After dinner we drove back down to the beach to catch this gorgeous sunset!

Sunday we went for a bike ride around the neighborhood.  I love getting secret exercises (aka exercise disguised as fun!).

Oh and I can’t forget the most important thing!  I celebrated National Dance Day by filming this Zumba video for you all!  Enjoy!
