Friday’s Food & Fitness: The Independent Edition
Hello and Happy Independence Day! I hope you are spending the day with loved ones and getting a chance to relax! Because it’s a holiday, I’m going to make this short and sweet! Welcome to Friday’s Food and Fitness: The Independent Edition.
After the yumminess of Baby Weekend, I tried really hard to make this week extra healthy. On the menu:
Mediterranean Quinoa Salad: quinoa tossed with cherry tomatoes, cucumbers, red onion and kale topped with lemon juice, olive oil, salt and pepper.
Farmer’s Market Salad with Tomato Basil Vinaigrette. This is a lettuce free salad made with zucchini and summer squash sliced in my food processor. I topped it with some sliced radishes, multi-colored cherry tomatoes and the tomato basil vinaigrette, which I made from pureeing a roma tomato and whisking in oil, basil, salt and pepper. Topped with some feta cheese and it was delicious!
Tomato Tart. This was so easy and so delicious. I bought a frozen quiche crust and baked it in the oven according to package directions. I then filled the crust with a mixture of part-skim ricotta, parmesan cheese and chopped basil. I sliced some heirloom tomatoes on top and added a bit more basil. So simple and so good!
These recipes were all taken from Williams Sonoma (I gave my good old Cooking Light a break this week). Whenever I get their catalog I always sit down and read it like a magazine to check out their amazing recipes. I hardly ever look at the products because I’m too busy looking at the food!
So this is not technically from this week but last week I went to my first outdoor summer workout! Woo hoo! They are held at Pier 25 and if you remember last year’s Summer of Fitness, I was a regular at these workouts.
Last week I attended Vbarre, which was a cool combination of traditional barre exercises, cardio and strength exercises.
This week I attended one of my favorites: 305 Fitness! It’s reminiscent of Zumba but with more cardio bursts and not strictly latin. It also incorporates a lot more calisthenics and plyometric moves. I love it! Plus, there is something so nice about working out outdoors during the warmer months.
305 Fitness has a live DJ, which just makes the entire experience so fun! The music really great and it is constantly changing.
The class was held at Pier 25 and sponsored by Lole (you might remember their White Tour!).
I did pretty well modifying because this class is super intense cardio. I can’t really jump around as much as I could pre-pregnancy so I had to take it kind of easy but I still got a great workout!
