Turkey & Brie Fall Sandwich

I made the most delicious sandwich on my day off this week!

Turkey, brie, fresh apples!

Pressed in the panini press.  OMG-so good!

I also made the Fig and Olive Salad for lunch this week but I sorta forgot to take a picture of it…. Sorry!  It was delicious- manchego and gorgonzola cheeses, apple, figs, scallions and walnuts with fig balsamic vinegar and olive oil.  Soooo good.

I always find it challenging to find good, quick and healthy lunch options.  The Fig and Olive Salad worked great for me this week because I bought pre-washed spring greens and put them in a big bowl with scallions and walnuts.  Then every night while I was waiting for dinner to cook I cut up the cheeses, apple and figs and prepared the dressing.  The whole thing only took a few minutes and all I had to do was grab the salad and go in the morning.

Another favorite lunchtime option for me is to cook up an entire box of couscous (I’m a big fan of Near East Roasted Garlic & Olive Oil).  I then add in one large diced tomato, one diced cucumber, one avocado and 1/4 cup of diced red onion.  I top it off with some chopped fresh mint, some crumbled feta, lemon juice and a drizzle of olive oil (you may not need the lemon juice if you are using flavored couscous).  I then put the entire couscous salad mixture in a big Pyrex bowl and dole out lunch-sized portions for an entire week.  Its so simple and so delish!
